Ingredients
- 2 blood oranges
- 1 shallot, diced
- 1 tablespoon red wine vinegar
- 3 tablespoons olive oil
- salt and pepper
- 1 bunch watercress, trimmed
- 2 cups iceberg lettuce, roughly chopped
- 1/2 cup rice crackers, crushed
Directions
- Segment blood oranges over a sieve and bowl to ensure all juices are reserved, set segments aside.
- Place shallots, red wine vinegar and olive oil in blood orange juice, season with salt and pepper and stir.
- Place watercress and iceberg lettuce on a serving plate.
- Spoon blood orange dressing over greens. Garnish with blood orange segments and crushed rice crackers.
