Blood Orange Watercress Salad

Blood Orange Watercress SaladBlood orange lends a refreshing flavour to this simple and delicious salad from Roger Mooking.
Preparation time: 10 minutes 

Yield: 4

Ingredients

  • 2 blood oranges
  • 1 shallot, diced
  • 1 tablespoon red wine vinegar
  • 3 tablespoons olive oil
  • salt and pepper
  • 1 bunch watercress, trimmed
  • 2 cups iceberg lettuce, roughly chopped
  • 1/2 cup rice crackers, crushed

Directions

  1. Segment blood oranges over a sieve and bowl to ensure all juices are reserved, set segments aside.
  2. Place shallots, red wine vinegar and olive oil in blood orange juice, season with salt and pepper and stir.
  3. Place watercress and iceberg lettuce on a serving plate.
  4. Spoon blood orange dressing over greens. Garnish with blood orange segments and crushed rice crackers.
