World Peas

World Peas

Ingredients

  • salt
  • 2 cups sugar peas
  • 1 cup Chinese snow peas
  • 1 cup frozen baby peas, thawed
  • 1 cup rehydrated black eye peas
  • 1 cup pea sprouts (optional)
  • 1 cup pea tendrils (optional)
  • 6 radishes, sliced thinly
  • 1/3 cup mint leaves, stems removed, chopped coarsely
  • 1 tablespoon lemon juice
  • 3 tablespoons olive oil
  • 1 cup dried wasabi peas

Directions

  1. Bring 4 cups of salted water to a boil and add snap peas. Thirty seconds later add snow peas. Thirty seconds later remove all peas with a slotted spoon and transfer to an ice bath. Let cool, then drain and pat dry with paper towels.
  2. In a large bowl, add sugar peas, snow peas, baby peas, black eye peas, pea sprouts, pea tendrils, radishes, mint, lemon juice and oil. Toss. Salt to taste and top with wasabi peas.
