Uitsmijter Recipe — Dutch Fried Egg & Ham Breakfast

An uitsmijter is a typical feature on Dutch cafe menus and appears on our family breakfast table at least once a weekend (although we prefer using whole wheat bread). Traditionally, the meal consists of fried eggs (sunny side up) on white bread, with ham and, sometimes, Gouda cheese. The word uitsmijtermeans 'bouncer' in Dutch) and the story goes that pub owners used to make this dish for clientele in the early hours before pushing them out the door and closing.
