Grilled Pineapple Salad

Grilled Pineapple SaladA recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don?t like. Try substituting one ingredient for another. Remember words have no flavour, you have to add your own!

Ingredients

  • 1 whole pineapple, skinned, cored and cut into 1" slices
  • 2 red onions, sliced thickly
  • 3 tablespoons olive oil
  • Salt and pepper
  • Zest and juice of 1 lemon
  • 1 cup of fresh mint leaves

Directions

  1. Preheat a gas barbeque or indoor grill.
  2. Brush pineapple and onion with olive oil and season with salt and pepper.
  3. Grill pineapple for about 5 minutes per side, until golden grill marks appear and the fruit softens
  4. Grill onion until soft.
  5. Cut pineapple slices into quarters and chop the red onions.
  6. Toss with lemon zest and juice, mint and adjust seasoning.
