Foamy Fava Bean Soup with Basil & Avocado Cream


This gorgeous green soup tastes of a fresh spring day, thanks to the tender taste of fava beans (also known as broad beans). This soup is best when made with freshly podded beans, which are now in season. Fava bean haters are usually put off by the texture, but because the soup is smooth as silk this should not be an issue. A rich and fluffy avocado cream lifts and fills out the dish.
