Potato Skins

Potato SkinsThis colourful side dish is full of rich flavours and it's easy-to-make on the BBQ.
Preparation time: 10 minutes 
Cooking time: 15 minutes 
Yield: 4

Ingredients

Potato Skins

  • 3 whole pre baked potatoes
  • 2 tablespoons olive oil
  • 2 cups cheese, your choice, grated
  • 1/2 cup green onions, chopped
  • 1/2 cup cooked bacon, chopped
  • Salt and pepper to taste

Garnish with:

  • 1/2 cup sour cream
  • 1/4 cup fresh chives, chopped

Directions

Potato Skins

  1. Preheat grill to 350°F. Medium heat.
  2. Oil grill.
  3. Cut potatoes into wedges and brush the flesh with the olive oil. Place on grill flesh side down. Cook for approximately 5 minutes or until golden brown and crispy.
  4. Flip over and fill with cheese, onions and bacon. Close lid and cook for 10 minutes or until golden and crunchy. Remove from grill and fill with the garnish.
  5. Garnish with chives and sour cream.
