An Almond Slice is great with a cup of tea

Serves: 14
Ingredients:
8 oz (225g - 2 cups) flour (plain)pinch of salt
4 oz (100g) margarine (cold)
1 egg (yolk)
1 egg (white)
cold water (to mix)
3 tbsp (45ml) apricot jam
4 oz (100g) caster sugar
4 oz (100g) icing sugar
6 oz (175 g) ground almonds
1 egg
2.5 ml almond essence
40g flaked almonds (to decorate)

7 x 11 inch (18 x 28 cm) shallow baking tin (greased)Method:
1. Preheat oven to 200C (400F) or Gas Mark 6.
2. Sift the flour into a mixing bowl.
3. Add the salt.
4. Dice the cold margarine.
5. Add margarine to the flour.
6. Rub margarine into the flour using your hands.
7. Add the egg yolk.
8. Add just enough cold water to bring it together into a soft dough.
9. Cover with cling film and chill for 30 minutes in a refrigerator.
10. Sprinkle some flour onto a work surface.
11. Knead the dough gently on the floured surface.
12. Roll out to a size to fit the baking tin.
13. Lay the pastry into the baking tin.
14. Spread the jam in the base.
15. Put the caster sugar into a bowl.
16. Add the icing sugar.
17. Add the ground almonds.
18. Mix them all together well.
19. Stir in the whole egg.
20. Stir in the remaining egg white.
21. Stir in the almond essence.
22. Spread evenly on top of the jam in the baking tin.
23. Decorate with the flaked almonds.
24. Bake in the preheated oven at 200C (400F) or Gas Mark 6 for about 25 minutes or until golden brown.
25. Leave to cool slightly.
26. Cut into about 14 slices.
27. Serve hot or cold.
