Red-cooking Winter Melon Recipe
Prep time: 5 minutes
Cook time: 10 minutes
Utensils:
Wok, bowl, plate
Serves 2
Ingredients:
200 g / 7 oz. winter melon, skinned, cut into cubes, about 1-inch
5 black mushrooms
2 slices ginger, cut into strips
1 tbsp. minced garlic cloves
2 chilis
1 tbsp. Szechuan peppercorns
1 tbsp. light soy sauce
1 tbsp. chicken essence
1 tbsp. cornstarch, mixed with 4 tbsps. water in a bowl
1 tbsp. rice wine, or dry sherry
3 tbsps. vegetable oil
Directions:
1. Heat 3 tbsps. vegetable oil in a wok until hot, pan fry winter melon until golden brown, remove to a plate then (P1).

2. Add Szechuan peppercorns, ginger, and garlic cloves, saute until aromatic, then put winter melon back, stir fry over medium high heat for 1-2 minutes (P2).

3. Add black mushrooms, 1 tbsp. light soy sauce, 1 tbsp. rice wine, and chilis, pour into 1-2 cups water, cook with the lid on for 2-3 minutes (P3).

4. Swirl into the cornstarch and water mixture, season with chicken essence, continue to cook until the sauce thickens.
5. Remove from the heat to a plate, serve hot (P4).
