Serves: 4
Ingredients:
1/4 cup olive oil
2 large onions (diced)
1 tablespoon orange zest (finely grated)
18 ripe tomatoes (quartered)
1 cup double cream (Heavy cream)
salt and pepper (to taste)
fresh basil leaves
Method:
1. Place a heavy saucepan over medium heat.
2. Sauté onions in olive oil, stirring occasionally until tender and translucent, about 10 to 12 minutes.
3. Stir in orange zest.
4. Stir in tomatoes.
5. Cook on medium heat for about 20 minutes (until the tomatoes have broken down).
6. Stir occasionally to prevent sticking or scorching.
7. Puree soup in batches using either a food processor or blender.
8. Strain the mixture through a food mill or medium mesh sieve placed over a clean saucepan.
9. Discard remaining peel and seeds.
10. Reheat soup mixture gently over low heat.
12. Season with salt and pepper.
13. Add double cream ((heavy cream).
14. Season to taste.
15. Just before serving add fresh basil, torn into small pieces.
