Flammulina Tomato Soup


Flammulina Tomato Soup:
What better ways to enjoy fresh, tasty vegetables, than in this delicious flammulina tomato soup? Here you only need a couple of ingredients you can easily find in your refrigerator, and it is very fast to make.
 
Prep time: 5 minutes
Cook time: 8 minutes
 
Utensils:
Wok, bowl.
Serves 3
 
Ingredients:
4 oz.(150g) pork tenderloin, cut into thin strips
3 tomatoes
2 tbsps. flammulina, shredded
4 pieces dried wood ears, soaked and cut julienne
1 tbsp. chopped coriander leaves
2 cloves crushed garlic
2-4 cups water
Marinade:
1 tbsp. Shao-Hsing rice wine or dry sherry
1 tsp. cornstarch
1 tsp. vegetable oil
1 tsp. chicken essence
Seasonings:
2 tbsps. vegetable oil
1 tbsp. Shao-Hsing rice wine or dry sherry
1 tsp. salt, or to taste
1 tsp. chicken essence
1 tsp. sesame oil
Directions:
1. In a mixing bowl, gently combine pork strips with the marinade, mix well and let marinate for 15 minutes (P1).

2. Cut tomatoes according to P2.

3. Heat 2 tbsps. vegetable oil in a wok till hot, then saute crushed garlic briefly until aromatic, about 20 seconds. Add tomato cubes back into the wok, turn heat to high, keep stir frying for 2 minutes (P3).

4. Add wood ears and 1 tbsp.Shao-Hsing rice wine, then pour into 2-4 cups water, bring to boil, then reduce heat to low and simmer for 5 minutes.
5. Add the marinated pork strips and cook until pork changes color and is nearly cooked through, sprinkle 1 tsp.salt and 1 tsp.chicken essence over them.
6. At the last minute of cooking, add flammulina, drizzle 1 tsp.sesame oil, then dump into a bowl, garnishing with 1 tbsp. chopped coriander leaves before serving (P4).
