Winter Melon with Prawn Soup


Winter Melon with Prawn Soup Recipe:
The combination of winter melon and prawn is one of those heaven-made matches that you simply must try if you haven't already. Winter melon with prawn soup is very light, but not lacking in great tastes.
 
Prep time: 5 minutes
Total time: 20 minutes
 
Utensils:
Wok, bowl.
 
Serves 2 as a main dish.
 
Ingredients:
14 oz./400g winter melon, peeled
5 prawns, peeled, deveined
1 tbsp.chopped scallion
2 slices ginger
1-2 tbsps.freshly chopped cilantro
1 tbsp.salt, or to taste
2 tbsps.vegetable oil for stir-frying
Directions:
1. Cut the winter melon into strips, about 1-inch length (P1).

2. Preheat a wok over medium high heat for 30 seconds, then add 2 tbsps.vegetable oil and drizzle, let it coats both the sides and the bottom of the wok, when the oil is hot, saute chopped scallion and ginger slices for 30 seconds, or until aromatic.
3. Add winter melon strips and cook, stirring over medium heat for about 2 minutes.
4. Pour into cups water (water must cover the winter melon), then add the prawns and turn the heat back to high, bring them to a boil (P2).

5. Taste for salt and adjust seasoning as desired, top with a sprinkling of chopped cilantro before serving (P3).
