Fish Sauce Fried Rice with Cucumber


A great comfort food - cooked rice with Chinese sausage, cucumber and other seasonings, also the fish sauce adds flavor to this homecooked fried rice dish.

Cook time: 5 minutes
 
Utensils:
Wok, bowl.
 
Serves 1
 
Ingredients:
1-2 cups precooked rice
1 Chinese sausage, casing removed
1/2 stalk scallion
1/2-1 cucumber
2 beaten eggs
3 tbsps.fish sauce
1 tbsp.chicken essence
1 tsp.salt, or to taste
2 tbsps.vegetable oil for stir-frying
Directions:
1. Cut the sausage, scallion, and cucumber into small cubes (P1).

2. Peaheat a wok on medium heat for at least 30 seconds before you add 2 tbsps.oil, drizzling the oil to coat the surface,when the oil is hot, add rice and stir fry for 1-2 minutes, add the beaten eggs and keep stirring (P2).

3. Add the sausage, and scallion cubes back to the rice, cook until fragrant, about 2 minutes, then add cucumber cubes, and 3 tbsps.fish sauce, keep stirring for another 2 minutes.
4. At last, taste and season with salt and chicken essence as desired, stir briefly to mix everything together.
5. Remove to a bowl, and serve hot (P3).
